Homemade healthy tortillas without shortening

Recipe Ingredients for Whole wheat Tortillas

1 cup all purpose flour
4 cups whole wheat flour
1/2 cup olive oil
1 1/2 cups water

Recipe Directions for Whole wheat Tortillas

Mix flours together with a pinch of salt. Use a fork to mix in olive oil and then use your hands to "rub" it into a cornmeal like texture. Make a well in the flour and add the boiling water. use a fork to combine as best you can and leave to sit for 5 minutes. Sprinkle with flour if dough is still sticky, or add water one TBSP at a time if too dry. Knead for 1 minute. Roll into palm sized balls and leave to sit covered with saran wrap for at least one hour. Roll out to desired thinness and cook on a hot griddle or saute pan for about 30 seconds per side. Store between paper towels in a zip top bag in the fridge or freezer.
