Recipe Ingredients for Whole wheat tomatoe basil pasta with turkey meatballs

100 pounds fresh tomatoes
50 onions
50 green bell peppers
10 cups extra virgin olive oil
2 cups balsamic vinegar
4 cups honey
1/2 cup salt
1/2 cup black pepper
2 cups ground oregano
4 cups dried basil
4 cups fresh garlic
25 cups noodles
12 cups parmesan cheese
5 cups bread crumbs
25 lb lean ground turkey
20 medium onion, small dice
5 c. liquid egg substitute
1 T. salt
3 T. garlic powder
3 T. dry mustard
2 T. black pepper
2 T. dried oregano

Recipe Directions for Whole wheat tomatoe basil pasta with turkey meatballs

  1. Heat oil in tilt skillet and sweat areomatics wiht dried herbs.

  2. Deglaze with balsamic vinegar then add honey and fresh tomatoes.

  3. Bring to a simmer for 45 minutes.

  4. Serve immediatly or cool, lable, and store propoly.

  5. Cook pasta in steam kettle, strain and cool for service.

  6. For meatballs preheat oven to 400 degrees F.

  7. Combine all ingredients roll two inch balls

  8. place on parchment lined sheet pans

  9. bake untill internal temperature reaches 165 degrees F.

  10. Garnish with low fat pamesan cheese.
