Gnocchi made with sweet potatoes and whole wheat flour.

Recipe Ingredients for Whole Wheat Sweet Potato Gnocchi

2 1/3 lbs sweet potatoes
1 3/4 cups flour
1 1/4 cups whole wheat flour (more or less as needed)
1 tsp salt
1 egg

Recipe Directions for Whole Wheat Sweet Potato Gnocchi

  1. Steam potatoes for about 25 - 30 minutes or until a knife penetrates without resistance.

  2. Peel the potatoes and while still warm mash them thoroughly.

  3. Add the flour, salt and egg. Mix until a soft dough forms. Do not over knead or the Gnocchi will be tough.

  4. Roll small potions of the dough into half inch wide ropes then cut into one inch pieces.

  5. Cook in boiling salted water. The Gnocchi will float to the surface when they are done.
