Recipe Ingredients for whole wheat strawberry rhubarb pie

2 c whole wheat flour
2/3 c shortening
1 tsp salt
2 c rhubarb, sliced
2 c strawberries, diced
1/2 c sugar
1/2 tsp orange extract
1 tbs butter

Recipe Directions for whole wheat strawberry rhubarb pie

  1. recipe for a nine-inch pie.

  2. preheat oven to 425 degrees.

  3. for filling: wash strawberries and cut in half (or quarters if large). peel and but rhubarb. mix in a bowl with sugar (more for a sweeter pie). add in orange extract, zest, cinnamon, grand marnier or other liqueur if desired.

  4. for crust: combine flour and salt. cut in shortening with pastry cutter (unhealthy, yes, but betty crocker classic!). add 4-5 tablespoons of cold water, one spoonfull at a time, mixing with a fork until it just holds together. divide dough in half and roll out two crusts. place one on the bottom and cut with scissor, leaving a half inch hanging over the edge of the pie pan. place strawberry rhubarb mixture in pie pan. cut butter into small peices and drop on top of the rhubarb mixture. cover with top crust. fold edges of bottom crust over the top and flute to seal. cut several steam vents.

  5. bake for 30 minutes, then remove pie and cover with foil to prevent over-browning. return to oven and bake for 10-20 minutes more, until filling is soft when poked w/ knife.
