It's surprisingly moist, fluffy, and has just the right amount of sweetness! It's pretty light and healthy. The texture is almost bread-like. Feel free to sub anything in or out, and play around with toppings! *Note: I baked it at a high altitude. Recipe Ingredients for Whole Wheat Strawberry Chocolate Chip Oat Cookie Bar

2 tbsp canola oil
1/2 cup sugar
1 large egg
1 tsp vanilla
3/4 cup whole wheat flour
1/4 cup oats
1 tsp baking powder
1/4 tsp salt
2 oz chocolate chips
6 oz strawberries
1 tsp cinnamon
1/4 cup water

Recipe Directions for Whole Wheat Strawberry Chocolate Chip Oat Cookie Bar

  1. Preheat the oven to 370 degrees.

  2. Dice the strawberries. (If frozen, microwave for 20 seconds, then dice.)

  3. In a medium bowl, stir the oil and sugar.

  4. Add the egg and vanilla and stir until smooth.

  5. Add the flour, oats, baking powder, cinnamon, and salt and stir until combined.

  6. Add the water to thin the batter.

  7. Combine the chocolate chips and strawberries in the batter.

  8. Pour batter into a nonstick spray sprayed 8x8 baking pan, or onto a nonstick spray sprayed baking sheet. Yes, it's thin :). Bake for 11 minutes.

  9. The edges should be crisp and when poked with a fork, the fork should come out clean. It should look like a cookie, and feel like a cake. Let it cool for 20-30 minutes before cutting.
