Tasty whole wheat pizza crust with low-fat toppings.

Recipe Ingredients for Whole Wheat Spinach & Pepperoni Pizza

2 c whole wheat flour
2 c all purpose flour
1/2 c warm water
2 1/4 tsp instant yeast
2 tbls olive oil
1 1/4 c water
1 1/2 tsp salt
10 oz frozen spinach
3 c lowfat mozzarella cheese
2 tbls olive oil
1 tsp italian seasoning
60 g turkey pepperoni

Recipe Directions for Whole Wheat Spinach & Pepperoni Pizza

  1. Sprinkle yeast on 1/2 c warm water (110 deg) in 2 cup measuring cup. Let stand 5 minutes.

  2. Combine flours and salt in standing mixer bowl.

  3. Add remaining 1 1/4 c water and 2 tbsp olive oil to yeast mixture.

  4. With mixer running (paddle), pour water/yeast mixture into bowl, mixing until combined.

  5. Change to bread hook and knead on medium speed for 5 minutes.

  6. Turn out into oiled bowl (or use cooking spray.) Cover and let stand, preferably in a warm spot, until doubled in size (1 1/2 to 2 hours.)

  7. When doubled, turn out onto floured surface and split into two pieces. Cover each piece with plastic wrap and leave to rise another 10 minutes.

  8. In the meantime, preheat oven and pizza stone to 500 deg. (Preheat stone at least 1/2 hour.)

  9. Work one crust at a time on a floured parchment paper. Use floured rolling pin to flatten the crust to an approximate circle that will fit onto your pizza stone.

  10. Cover crust with low-sodium pizza sauce or, better yet, brush with olive oil and sprinkle with pizza seasoning (Penzey's is good.)

  11. Spread thawed and drained spinach and dot with pepperoni. Cover with cheese.

  12. Slide, parchment and all, onto pizza stone. Slide off when cheese is brown, 7 - 12 minutes.

  13. Repeat for second crust, varying toppings to individual tastes. Enjoy!
