I hate tomatoes, so I'm trying to make a marinara with pumpkin instead. The idea came from William Sonoma.

Recipe Ingredients for Whole wheat spaghetti with simple pumpkin sauce -V B

8 oz whole wheat spaghetti, dry
1/2 cup red wine
1 small onion, chopped
2 garlic cloves, crushed
15 ounce pumpkin
2 teaspoons Italian seasonings
1/10 oz frozen apple juice concentrate
1/4 teaspoon black pepper

Recipe Directions for Whole wheat spaghetti with simple pumpkin sauce -V B

  1. Cook pasta according to package directions.

  2. Heat wine or water in a large pot, then add onion and garlic and cook until soft, about 5 minutes. Add pumpkin, Italian seasonings, apple juice concentrate, and black pepper. Cover and simmer 15 minutes.
