Recipe Ingredients for whole wheat spaghetti and meatballs

330 pounds whole tomatoes
12 cups extra-virgin olive oil
132 medium onions, chopped
264 cloves garlic, minced
8 1/4 ounces dried basil
8 1/4 ounces dried thyme
8 1/4 ounces dried oregano
1 1/5 pounds salt
5 1/2 ounces freshly ground pepper
22 ounce sugar
1 1/4 pound extra-virgin olive oil
11 pounds (200 slices) whole wheat bread
1 pound grated Parmesan cheese
100 clove garlic, minced
8 1/2 ounces dried oregano
10 cup bulgur
17 cup hot water
8 1/2 pounds lean ground beef
8 1/2 pounds ground turkey
34 medium onion, very finely chopped
68 large egg whites, lightly beaten
102 cloves garlic, very finely chopped
6 ounces dried oregano
3 ounces salt
3 ounces freshly ground pepper
34 cup fresh breadcrumbs, preferably whole-wheat
50 pounds whole wheat pasta

Recipe Directions for whole wheat spaghetti and meatballs

  1. using fresh tomatoes, bring a large pot of water to a boil. Make a small X in the bottom of each tomato and plunge into the boiling water until the skins are slightly loosened, 30 seconds to 2 minutes. Transfer to a bowl of ice water for 1 minute. Peel with a paring knife, starting at the X. If using frozen tomatoes, run each under warm water and peel or rub the skin off. Thaw in the refrigerator or defrost in the microwave until mostly thawed. Chop the tomatoes, reserving any juice.

  2. Heat oil in a Dutch oven over medium heat. Add onions and cook, stirring, until beginning to brown, about 4 to 6 minutes. Add garlic and cook, stirring, for 1 minute. Add the tomatoes (and any juice), basil, thyme, oregano, salt, pepper and sugar (if using). Bring to a boil. Reduce heat to maintain a simmer and cook until thickened to desired consistency, stirring occasionally, 1 to 11/2 hours. Taste and season with additional salt, pepper and/or sugar.

  3. light bush bread with olive oil, add parm, garlic dried oregano and bake

  4. slice and serve

  5. Combine bulgur and water in a small bowl. Let stand until the bulgur is tender and the liquid is absorbed, about 30 minutes

  6. Preheat oven to 350F.

  7. Combine ground beef, ground tukey, onion, egg whites, garlic, oregano, salt, pepper, breadcrumbs and the soaked bulgur in a large bowl; mix well.

  8. Form the mixture into 1-inch meatballs

  9. Place the meatballs on the rack and bake for 25 minutes.
