Recipe Ingredients for Whole Wheat Spaghetti with Garlic, Olive Oil, and Broccolli

3 tbsp Oil Olive Extra Virgin
12 clove Garlic
16 oz dry Whole Wheat Spaghetti
3 tbsp Parsley
2 Teaspoon Juice
12 oz Broccoli
2 oz Parmesan, Hard Cheese

Recipe Directions for Whole Wheat Spaghetti with Garlic, Olive Oil, and Broccolli

  1. Bring 4 quarts water to boil.

  2. Saute 3 tablespoons of garlic in 3 tablespoons of oil over low heat, stirring often, until garlic is sticky, foamy & straw-colored, about 10 minutes. Transfer to small bowl.

  3. Add 1/2 cup water & broccoli florets to skillet. Cover & cook over medium-high heat until broccoli is tender but crisp at center, 5-7 minutes. Drain.

  4. Cook & drain spaghetti.

  5. Stir parsley, lemon juice, red pepper flakes, remaining 3 tablespoons oil, sauteed garlic, broccoli & 2 tablespoons reserved pasta cooking water to spaghetti.

  6. Season with remaining tablespoon raw garlic, salt & pepper to taste.

  7. Add reserved pasta cooking water as needed to loosen sauce.

  8. Serve, passing the parmesan separately.
