A slightly more healthy version but I wouldn't call it "health food"!

Recipe Ingredients for Whole Wheat Shortcakes

9 oz (about 2 c) whole wheat pastry flour
1/3 c Sucanat
1/4 c Splenda granulated
2 t baking powder
1/2 t salt
1/2 c butter, chilled & cut into small pieces
180 g (3/4 c) low-fat buttermilk

topping:
2 t water
1 egg white
2 t sugar

Recipe Directions for Whole Wheat Shortcakes

  1. Preheat oven to 400 degrees.

  2. Combine buttermilk, Splenda and sucanat. Mix well. Sucanat takes a while to dissolve.

  3. Sift whole wheat pastry flour. Lightly spoon flour into measuring cup and level with a knife--do not tap down. Combine flour, baking powder and salt in food processor. Process to mix well. Add butter pieces and pulse until mixture resembles coarse meal. Transfer to bowl.

  4. Add buttermilk/sugar mixture and stir until just moist--do not overmix.

  5. Turn dough out onto lightly floured cold surface; knead lightly 4-5 times. Pat into a 9-inch round cake pan coated with cooking spray.

  6. Whisk water and egg white to blend. Brush over dough and sprinkle with 2 t sugar.

  7. Bake at 400 degees for 25 minutes or until golden. Cool in pan 5 minutes and turn out onto wire rack. Cool completely. Cut into 10 wedges.

  8. To serve, split each wedge horizontally and top with fresh berries mixed with a bit of fruit juice. Also good lightly toasted to accompany your afternoon tea.
