a delicious and easy to make flat bread. Adapted from a recipe at: http://curryinkadai.blogspot.com/2007/09/indian-whole-wheat-flat-bread-chapathi.html

Recipe Ingredients for Whole Wheat Seeded Flat Bread

9 oz whole wheat flour
3/4 cup warm water (you may need more water)
2 1/2 tbsp olive oil (plus more for brushing)
1 tsp salt
1/2 tsp sugar
3 tsp caraway seed
3 tsp black sesame seed
3 tsp mustard seed

Recipe Directions for Whole Wheat Seeded Flat Bread

  1. Use food processor or stand mixer if you have one and warm the water in the microwave.

  2. In a mixing bowl add all ingredients except for the water and mix together.

  3. Slowly add warm water and knead it into a soft dough. If dough is too dry, add a little more water.

  4. Knead the dough for 10 minutes and cover it with a damp cloth. This step is great for a stand mixer fitted with the dough hook.

  5. Let it rest for at least 20 min.

  6. Divide dough into 12 equal portions and coat them with flour.

  7. Roll each one into a 6 inch flat round.

  8. In the meanwhile heat griddle or cast iron pan on medium heat.

  9. Put the rolled out dough on the griddle and heat on one side. Once the bubbles start appearing and bread begins to smell fragrent, flip the flat bread and heat it on the other side for 15 sec.

  10. Remove it and brush a small amount of oil on the hot bread and cover it with a lid.

  11. Cook the remaining flat breads in the same manner, stacking them under the lid.
