Recipe Ingredients for Whole Wheat & Seed Loaf

3 cups whole wheat flour, sifted
2 tablespoons gluten flour
1/2 cup oats
1/4 cup flaxseed
1/4 cup flaxseed meal
1/4 cup wheat germ
1/4 cup raw, unsalted, raw sunflower seeds
1/4 cup raw, unsalted, raw pumpkin seeds
1/8 cup black sesame seeds
1/8 cup white sesame seeds
1 1/2 teaspoons salt
1 1/2 cups water, room temperature
1 1/2 tablespoons canola oil
2 tablespoons barley malt syrup
1 1/2 teaspoons yeast, quick rise

Recipe Directions for Whole Wheat & Seed Loaf

  1. Mix dry ingredients in large bowl.

  2. Mix wet ingredients in small bowl.

  3. Add wet ingredients to dry ingredients combine with mixer using dough hooks to form a rough dough. Let stand 15 to 20 minutes.

  4. Bring full tea kettle on stove to boiling. Knead dough for 10 minutes on floured surface. Shape dough into loaf and place in oiled Pyrex bread pan. Score top of loaf with sharp knife. Cover with cheesecloth. Place in microwave along with bowl filled with boiling water. Close the door and let rise 60 to 90 minutes until doubled.

  5. Place cast iron skillet on lower rack of oven and preheat oven to 350 degrees (some recommend pre-heating cast iron skillet for an hour prior to baking). Place bowl-full of ice in cast iron skillet and then place the loaf pan on the rack above. Bake 45 to 50 minutes.

  6. Remove the loaf from the pan and let cool on wire rack before placing in storage bag.
