Serve with your favorite topping or eat on their own. Once they are a day old, split and lightly toast to eat with tea.

Recipe Ingredients for Whole Wheat Scones

3 c whole wheat pastry flour
2 T baking powder
1/2 t baking soda
1/2 t salt
1/2 c butter, chilled and cut into pieces
1 c buttermilk
1 egg, beaten
5 T Sucanat
2/3 c currants

Recipe Directions for Whole Wheat Scones

  1. Preheat oven to 400 degrees.

  2. Soak currants in hot water for about 30 minutes (while preparing other steps). and drain well.

  3. Combine buttermilk, beaten egg, and Sucanat and mix until Sucanat dissolves. You can let it sit a while and whisk several times.

  4. Sift whole wheat pastry flour. Lightly spoon flour into measuring cup and level with knife--do not tap down. Combine flour, baking powder, baking soda and salt in food processor and process until well mixed. Add butter pieces and process until mixture is crumbly.

  5. Transfer to a bowl and add buttermilk mixture. Stir gently just until dough clings together. Turn out onto a lightly floured surface. Add drained currants and knead lightly until just incorporated, about 4-6 times.

  6. Divide dough into 2 and pat into 6-inch circles. Cut each circle into 6 wedges. Place wedges on a baking stone or baking sheet at least 1 inch apart. Bake 18-20 minutes or until golden brown.

  7. May add about 1 t of any flavors such as cinnamon, or vanilla or almond extracts or substitute other dried fruit for currants. The varieties are endless!
