Recipe Ingredients for Whole wheat rollups with tangy white beans and veg

15 oz canned navy beans, drained and rinsed
1 lemon, juiced
2 tbsp slivered almonds
1 cup cilantro leaves, loosely packed
3/4 tsp kosher salt
1 black pepper, to taste
4 flour tortillas, whole wheat
2 carrots, grated
1/2 english cucumber, sliced
1 large tomato, sliced
1 red bell pepper, roasted, jarred, cut into strips
4 romaine leaves

Recipe Directions for Whole wheat rollups with tangy white beans and veg

  1. Place the beans, lemon juice, almonds, cilantro, and salt in a food processor fitted with the metal blade. Puree the ingredients until smooth. Transfer to a bowl and season with black pepper.

  2. To assemble, spread the tortillas on a counter. Spoon 2 heaping 2 tbsp of the white bean mixture onto the center of each tortilla and spread it out evenly. Add the grated carrot, cucumber slices, and tomato slices, strips of bell pepper, and a lettuce leaf to each tortilla.

  3. Fold in the sides of the tortilla and, from the end nearest you, roll up into a cigar shape. Repeat to roll the remaining tortillas. Serve at once.
