1/2 cup of demerara sugar for 1/2 cup of honey.

Recipe Ingredients for Whole Wheat Raisin Nut Bread

475 g whole wheat flour
30 g oat bran
14 g wheat bran
2 tsp baking powder
1 1/4 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
364 g skim milk
86.92 g demerara sugar
113 g unsweetened applesauce
135 g Thompson raisins
75 g dry roasted unsalted chopped peanuts

Recipe Directions for Whole Wheat Raisin Nut Bread

  1. In a large mixing bowl combine flour, oat bran, wheat bran, baking powder, baking soda, cinnamon, and salt; make a well in the center.

  2. In a medium mixing bowl combine skim milk, sugar and applesauce. Add all at once to flour mixture; stir just until moistened.

  3. Fold in raisins and nuts.

  4. Spread in a parchment paper lined 9 x 5 x 3 inch loaf pan; bake at 350C for 50 minutes or until a wooden toothpick inserted near the center comes out clean.

  5. Cool in pan for 10 minutes. Remove from pan; cool thoroughly on wire rack.

  6. For a more moist bread, wrap and store overnight.
