Makes 18 pancakes. These are a hearty, thick pancake. Adapted from online post on 'Tammy's Recipes' blog

Recipe Ingredients for Whole Wheat Pumpkin Pancakes

1 1/2 cups whole wheat flour
1/2 cup rolled oats, ground
4 T flax seed meal
1 teaspoon baking soda
2 teaspoons baking powder
1/4 teaspoon salt
2 teaspoons ground cinnamon
1/4 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1 1/4 cup buttermilk
1 cup pumpkin, canned
2 eggs
1/2 cup fat free yogurt
2 T brown sugar
2 T skim milk (to thin, if necessary)
2/3 cup pecans, chopped
16 T maple syrup (2 per serving, optional)

Recipe Directions for Whole Wheat Pumpkin Pancakes

  1. In a large mixing bowl, whisk together the dry ingredients. Set aside.

  2. In a separate mixing bowl, whisk together the buttermilk, pumpkin, eggs, yogurt, and brown sugar. Add skim milk to desired consistency.

  3. Add wet mixture to dry and stir gently just until a batter forms (can be lumpy).

  4. Stir in chopped pecans (or, if you prefer, save for topping cooked pancakes)

  5. Cook pancakes on a greased and pre-heated griddle or skillet. Ladle batter onto griddle, spreading it out slightly if needed.

  6. Turn pancakes when edges are firm, and bubbles have popped. Batter will have lost it's 'shiny' look. (for me, usually three minutes on the first side, two more on the second...)

  7. Serve warm, with maple syrup.

  8. Note: These may need to cook a bit longer than regular pancakes.
