Recipe Ingredients for Whole Wheat Pumpkin Muffins

1/2 cup rolled oats
1 1/2 cup wheat flour, whole grain
15 oz. canned pumpkin
1/4 cup honey
3 tsp baking powder
3 tbsp coconut oil
1/2 tsp salt
2 eggs

Recipe Directions for Whole Wheat Pumpkin Muffins

  1. Mix dry ingredients.

  2. Mix wet ingredients in separate bowl.

  3. Combine with minimal stirring.

  4. Immediately transfer to muffin tin with 12 wells.

  5. Bake 20 minutes or until a toothpick inserted comes out clean.

  6. Let rest in the tin for 5 minutes before removing.
