Recipe Ingredients for Whole Wheat Pumpkin Muffins with Flaxseed

1 cup Pumpkin
198 grams Egg, White
1 cup, chopped Carrots
1 medium (7" to 7-7/8" long) Bananas
1/2 cup (not packed) Raisins, Seedless
1 cup Wheat Flour, Whole-grain
0.5 cup Flaxseed
6 tsp Pumpkin Pie Spice
1 tbsp Cinnamon, Ground
16 tbsp Milk Powder Skim Instant
1 tbsp Vanilla Extract
2 tsp Baking Soda

Recipe Directions for Whole Wheat Pumpkin Muffins with Flaxseed

  1. Pre heat oven to 350 degrees

  2. In a separate bowl combine all dry ingredients

  3. In a food processor, chop the carrots and banana

  4. In a large mixing bowl, beat egg whites

  5. Add the carrots, banana, raisins, and vanilla extract to the eggs

  6. Mix in dry ingredients

  7. Bake in a non-stick muffin pan for approximately 20 minutes

  8. Makes 18 muffings
