Recipe Ingredients for Whole Wheat Pumpkin-Cranberry Muffins

4 eggs
2/3 cup honey
3 tablespoons olive oil
9/10 cup unsweetened applesauce
15 ounces canned pumpkin
1 1/2 cups whole wheat flour
1 1/2 cups white flour
1 teaspoon salt
1 3/4 teaspoons baking soda
3 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground cloves
1/2 teaspoon ground allspice
1/3 cup golden raisins
1 cup craisins

Recipe Directions for Whole Wheat Pumpkin-Cranberry Muffins

  1. Preheat the oven to 375 degrees F. Grease two loaf pans or 24 muffin cups. Combine the eggs, honey, applesauce, oil, and pumpkin in a large bowl, and stir until smooth.

  2. In a medium bowl, mix the second set of ingredients with a wire whisk. Add the craisins and raisins (can also add a cup of chopped nuts, if desired, though that's not included in the calorie count). Add to the egg mixture and mix thoroughly. Fill the loaf pans or muffin cups with the batter.

  3. Bake the bread at 375 degrees F for 1 hour and 10 minutes (check partway through; it may finish early), or the muffins for 25 to 30 minutes. When the bread is done, a toothpick inserted in the center will come out clean.

  4. Yields 2 loaves or 24-27 muffins.
