Recipe Ingredients for Whole Wheat Pizza Crust

5 1/2 cups whole grain flour
1 cup semolina flour
1 tbsp olive oil
1 tbsp kosher salt
2 1/2 cups water
2 1/4 tsp yeast

Recipe Directions for Whole Wheat Pizza Crust

  1. Heat water to lukewarm and pour into large bowl. Sprinkle yeast over and whisk to dissolve. Add 3 cups of flour, one cup at a time, whisking in until smooth. Cover and set aside for at least 20 minutes (the longer, the better).

  2. Add salt, oil, and semolina, and mix until smooth. Add 2 more cups of flour, one cup at a time, mixing until each is well combined. When dough is too stiff to stir, turn out onto floured surface and knead 8-10 minutes or until it's well-kneaded (use the other 1/2 cup of flour for kneading, or whatever amount is required). Cover and set aside to rise until volume doubles, around 1.5 hours.

  3. Punch down and divide into three, equal portions. Roll, toss, or shape each portion into the desired size and shape for pizza (each portion can make a good 15-16" crust, depending on desired thickness). Top and bake on well-heated pizza stone until bottom of crust is mottled brown (typically 7-11 minutes at 555, depending on thickness of crust and amount of toppings).

  4. Often we shape and top one crust while a pizza is baking. We sprinkle a bit of cornmeal on a pizza peel, lay the shaped dough on the peel, and top.

  5. One can easily divide the same dough into smaller portions for personal pizzas, if desired.

  6. If you do not want to use all the dough at once, it keeps well, tightly wrapped, in the refrigerator for up to a week or in the freezer for up to a month. Allow to come up to room temperature before shaping. You may need some additional kneading with flour to bring the dough back properly.
