Healthy and delicious pita pockets, fresh from the oven, require very little work.

Recipe Ingredients for Whole wheat pita pockets

1 1/2 cups warm water
2 1/4 tsp active dry yeast
1 1/2 tablespoons extra virgin olive oil
1 tablespoon extra virgin olive oil
1 1/2 teaspoon honey
3 cups whole wheat flour
1 tsp salt

Recipe Directions for Whole wheat pita pockets

  1. Combine the warm (110 degrees) water, yeast, 1 1/2 tablespoons EVOO and honey in the bowl of a stand mixer with the kneading hook attached. Allow the yeast to bloom, which takes about 5 minutes.

  2. Add the whole wheat flour and salt to the wet ingredients, and mix together 1 minute, scraping down the sides as necessary.

  3. Knead with the hook for 2 minutes at a slow speed, then 2 minutes at a medium speed.

  4. Turn dough onto a lightly floured surface and knead by hand for a minute or two.

  5. Place dough in an oiled bowl and turn to coat dough.

  6. Cover and allow to rise for 2 hours in a draftless space.

  7. Turn risen dough onto a lightly floured work surface and knead for a minute.

  8. Divide dough into 16 equal parts, roll each into a ball, and cover with a towel while they rise for a final 20 minutes.

  9. Heat pizza stone in oven to 500 degrees.

  10. Roll each ball into a 6-inch circle. Cook three or four at a time on parchment paper on the pizza stone for 2 minutes, until they puff up. Immediately move to a cooling rack. Serve warm or cold.
