Homemade whole grain pita, quick and easy

Recipe Ingredients for Whole Wheat Pita, Homemade

6 cups whole wheat flour
3 cups water, warm
2 tsp salt
2 tbsp yeast
1 tbsp honey

Recipe Directions for Whole Wheat Pita, Homemade

  1. Add honey and yeast to warm water in bowl of mixer

  2. Let yeast bloom, 5-10 minutes

  3. Add salt

  4. Gradually add flour, until dough forms ball and cleans sides of mixing bowl.

  5. Knead for 10-12 minutes

  6. Divide dough into 24 balls

  7. Prehead oven, with pizza stone, to 500 degrees

  8. Roll out dough balls in to 1/4" thick disks, cover lightly to rest for 15 minutes

  9. Bake three pitas at a time on hot pizza stone, waiting about 2 minutes between batches for stone to re-heat.

  10. Place hot pitas in a plastic bag to deflate, then remove to cool completely.

  11. Store in plastic bags in refrigerator or freezer.
