Recipe Ingredients for Whole Wheat Penne Pasta & Chicken Prima Vera

2 cups chopped chicken breast, cooked*
4 cloves garlic, chopped
4 tomatoes, rough chopped
1 bell pepper, rough chopped
1 onion, chopped
2 tablespoons lime juice
2 tablespoons lemon juice
1/4 cup white wine
1/2 cup reduced fat feta cheese
13 oz whole wheat penne pasta, one box, cooked

Recipe Directions for Whole Wheat Penne Pasta & Chicken Prima Vera

  1. Spray non-stick skillet with cooking spray.

  2. Heat non-stick skillet on medium high and add the chopped chicken breast, garlic, tomatoes, bell pepper, and onion. Let saute for about 5 minutes.

  3. Add lime juice lemon juice and white wine and let reduce.

  4. Turn off heat and add the feta cheese. Place pasta in a large pasta bowl and place the chicken mixture over. Toss together and serve.

  5. *You can use raw chopped chicken breast if you would like but you may have to cook it a for about 7 minutes to ensure that it is fully cooked.
