Recipe Ingredients for Whole-Wheat Penne with Lemon, Basil and Shrimp

1/2 pound whole-wheat penne
2 cloves garlic, minced
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
2 teaspoons olive oil
1 pound shrimp
1/4 cup fresh basil leaves
3 tablespoons capers
1 tablespoon lemon zest
2 tablespoons lemon juice

Recipe Directions for Whole-Wheat Penne with Lemon, Basil and Shrimp

  1. Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm.

  2. Drain pasta and transfer to a large bowl. Add 1 clove minced garlic and 1 Tablespoon olive oil.

  3. Heat 2 teaspoons of olive oil in saute pan over medium heat. Add 1 clove minced garlic. Season shrimp with salt and peper, then add to the pan with the garlic. Cook until shrimp turns pink.

  4. Add the shrimp, basil, capers, lemon zest and lemon juice to the penne mixture and toss to combine.

  5. Divide into 4 portions. Serve immediately.
