Penne, Italian Sausage, Broccoli, spinach, & cherry tomatoes. It's a good combination of flavors. I could only get mild Italian sausage, but I believe that hot Italian sausage would be better, minus the red pepper flakes in this recipe.

Recipe Ingredients for Whole Wheat Penne, Italian Sausage & Vegetables

7 oz whole wheat penne
7 oz. mild Italian sausage
1/2 cup chicken broth (low sodium, no fat)
3/4 cup broccoli
2 cloves garlic
1 leek
1 1/2 cups fresh spinach
5 mushrooms
1/2 cup cherry tomatoes
1 tsp black pepper
1/8 tsp red pepper flakes
1 oz. Romano cheese (shredded)

Recipe Directions for Whole Wheat Penne, Italian Sausage & Vegetables

Cook the penne, according to package directions. Saute sausage until no longer pink. Add chopped mushrooms, garlic, and leek to the sausage as it is cooking. Pour in chicken broth. Add brocolli and spinach and peppers. Put a lid on the skillet and simmer until vegetables are done--3 or 4 minutes. They should stay bright green. Stir mixture until well mixed. Sprinkle the shredded Romano cheese over the mixture.
