Recipe Ingredients for Whole Wheat Penne with Chicken, Chard, and Pepper

1 lb skinless chicken breast
2 tablespoons extra virgin olive oil
1 small onion
1 bell pepper
4 cloves garlic
1 cup cooked swiss chard
1 cup water
10 oz pasta
1/8 cup grated cheese

Recipe Directions for Whole Wheat Penne with Chicken, Chard, and Pepper

  1. Sprinkle chicken with salt and pepper.

  2. Heat oil in large skillet over medium-high heat. Brown chicken then add onion, pepper, chopped chard stems and garlic. Cook and stir 5 minutes.

  3. Fill large pot with lightly salted water and bring to boil.

  4. Add chard to skillet, sautée until thoroughly until wilted.

  5. Add water/veggie stock and remaining salt and pepper. Cook until chicken is thoroughly cooked.

  6. While broth is heating, cook penne. Drain and return to pot.

  7. Add chicken mixture to hot penne and toss. Salt and pepper to taste. Sprinkle with cheese.
