A whole wheat pastry crust recipe for making homemade vegetarian quiche. This whole wheat crust could also be used for a pie crust as well as a quiche crust. Although this recipe calls for milk, you could use soy milk for a vegan pastry crust.

Recipe Ingredients for Whole Wheat Pastry Crust, Pie Crust or Quiche Crust

1 cup whole wheat pastry flour
1 tsp sugar
3/4 tsp salt
1 tbsp vegetable oil
3 tbsp milk
1 tbsp butter (for the pan)

Recipe Directions for Whole Wheat Pastry Crust, Pie Crust or Quiche Crust

  1. Preheat oven to 400 degrees.

  2. Into 8 or 9-inch quiche plate or pie plate, stir together flour, sugar and salt. With fork, whip together oil and milk; pour over flour mixture. Mix with fork till all flour is dampened. Press dough evenly against bottom and sides of plate. Crimp edges.

  3. Line the unpricked pastry shell with a double thickness of foil. Bake in oven for 8 minutes.

  4. Remove foil. Bake for 4 to 5 minutes more or till pastry is set and dry. Remove from oven.
