Recipe Ingredients for Whole Wheat Pasta with Roasted Butternut Squash and Goat Cheese

20 ounces fresh butternut squash, cut into 1/2 inch cubes
2 cups broccoli florets
1/2 tsp sage
1 tsp minced garlic
1 tsp thyme
1/2 tsp ground allspice
1/2 tsp paprika
2 tbsp butter, melted mixed with 2 Tbsp olive oil
1 package+10+oz baby spinach
1/2 lb. Whole Wheat Pasta
1/2 cup chopped walnuts
6 ounces goat cheese, crumbled

Recipe Directions for Whole Wheat Pasta with Roasted Butternut Squash and Goat Cheese

  1. Toss squash, broccoli, spices and butter/olive oil in a bowl. Spread evenly on a cooking sheet. Bake mixture at 450° for 15-18 minutes.

  2. In a large skillet over medium heat 1-1/2 tsp of olive oil ? coat the pan. Add 1 bag of fresh baby spinach. Lightly sauté until spinach is wilted. Add this to butternut squash mixture.

  3. Move everything to a large pasta bowl. Stir in flaked goat cheese and walnuts. Toss with hot pasta and serve.
