Recipe Ingredients for Whole Wheat Pasta with Ricotta and Vegetables

8 oz barilla penne
12 oz brocccoli
12 oz spinach
1 red bell pepper
8 oz green beans
1 cup ricotta cheese
1 tbsp dried basil
1 teaspoon dried thyme
4 teaspoons balsamic vinegar
1 tbsp olive oil
1 garlic clove
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tbsp grated parmesan

Recipe Directions for Whole Wheat Pasta with Ricotta and Vegetables

Cook pasta according to package directions. Cook vegetables. I typically use frozen broccoli and spinach. The other vegetables I like to toss on the grill. In a large serving bowl, combine ricotta, basil, thyme, balsamic vinegar, olive oil, Parmesan, garlic, salt and freshly ground pepper. Add cooked pasta and vegetables to ricotta mixture. Toss to combine. Serve immediately.
