Homemade, with flax seed, cooking spray instead of oil

Recipe Ingredients for Whole Wheat Pancakes

3 cups whole wheat flour
3 cups skim milk
1/2 cup ground flax seed
1/4 cup sugar
1 tbsp baking powder
1 tsp salt
3 large eggs
1 cooking spray

Recipe Directions for Whole Wheat Pancakes

  1. Combine flour, flax seed, sugar, baking powder, and salt in medium mixing bowl. Stir with wire whisk. Gradually add milk, continuing to sir with whisk. In seperate small bowl, beat eggs. Add eggs to flour and milk mixture, using whisk. Mix well.

  2. Heat non-stick skillet over medium heat. Using cooking spray as needed, ladel pancake batter onto cooking surface (either one large pancake or 3 smaller ones). When small bubble appear and pop of surface of pancake, flip over to cook other side. Pancake is done when it is no longer squishy when pressed with finger. Outside of pancake should appear golden in color. If desired, keep pancakes warm in oven until all are cooked.
