Adapted from Joy of Cooking. Uses whole buttermilk and whole wheat flour.

Recipe Ingredients for Whole Wheat Pancakes

3 cups white whole wheat flour
6 tablespoons sugar
3 teaspoons baking powder
1 teaspoon salt
1 teaspoon baking soda
3 cups whole buttermilk
6 tablespoons unsalted butter
4 eggs
1 teaspoon vanilla

Recipe Directions for Whole Wheat Pancakes

  1. Prepare and preheat griddle.

  2. Whisk together flour, sugar, baking powder, salt, and baking soda in a large bowl.

  3. In another bowl, melt butter. Whisk in milk, eggs, and vanilla.

  4. Pour the wet ingredients over the dry, and whisk together until just combined. Let sit for 5 minutes.

  5. Spoon 1/4 cup batter onto the griddle for each pancake. Cook until the underside is nicely browned, flip, and brown the other side.
