Using spelt flour instead of whole-wheat flour is optional. Serve with coconut chutney or yogurt (or both).

Recipe Ingredients for Whole-wheat pancakes - Atta dosa

250 grams Spelt Flour
15 grams Coriander
10 grams Fresh Chili
1 tsp Salt, Table

Recipe Directions for Whole-wheat pancakes - Atta dosa

  1. Mix all the dry ingredients together in a large bowl.

  2. Slowly add 475ml lukewarm water and whisk it into the flour until you have a smooth pancake batter. Cover the bowl with a cloth and let it stand for at least 30 min.

  3. Beat the batter again. When you are ready to cook, grease the griddle with about half teaspoon of ghee and put it over medium heat.

  4. Beat the batter again- it should be of pouring consistency. Flick a few drops of water into the pan. If they bounce and splutter, the pan is ready.

  5. Pour 4 tablespoons of batter and use the back of the spoon to spread it out thin. Cook for 2-3 min. until they are golden brown. Turn once.

  6. Preparation time: 10 min. Standing time: 30 min. Cooking time: 5 min./dosha
