I downsized a normal sized recipe to make 1 serving at a time.*Overmixing produces a tougher pancake.

Recipe Ingredients for Whole Wheat Pancake recipe for 1

1/4 c. whole wheat flour
1 T wheat bran
1/4 c. 2 % milk
3/10 tsp baking powder
0.06 tsp. salt
0.06 tsp. vanilla extract
1 medium egg, separated
3/10 tsp. unsweetened applesauce

Recipe Directions for Whole Wheat Pancake recipe for 1

  1. Measure dry ingredients together.

  2. Mix milk with egg yolk, vanilla, and applesauce. Add dry ingredients and mix just until combined.*

  3. Fold in stiffly beaten egg white.

  4. Bake on hot griddle.

  5. Makes 1 large or two small pancakes.
