Makes 3 servings



Delicious whole grain pancakes. Can add walnuts to increase protein. Also good with some cottage cheese blended in.

Recipe Ingredients for Whole Wheat and Oat Pancakes

1/2 cup whole wheat flour
1/2 cup unbleached white flour
1/3 cup rolled oats
1 cup skim milk
1 T. lemon juice
2 eggs
1 T. corn oil
2 T. butter
1/2 t. cinnamon
1/4 t. salt
1/4 t. baking soda
2 1/2 t. baking powder

Recipe Directions for Whole Wheat and Oat Pancakes

Sift dry ingredients into large bowl. Set aside. Beat eggs in another bowl. Add other liquids and mix well. Mix wet ingredients into dry and stir quickly till just mixed in. Bake on hot griddle. Pass butter/syrup or berries. Can reduce cholesterol by substituting oil for butter.
