My father just had a heart attack a month ago and we are really changing our diets. But you can't completely take away chocolate chip cookies! So, I took a regular chocolate chip cookie recipe and made a few improvements to make it a little more healthy, but still just as yummy! These have a very little amount of saturated fat, sodium, and sugar. They also do not have any cholesterol because of the egg beaters and shortening.

Recipe Ingredients for Whole Wheat Oat Choco Chip Cookies

1 cup shortening (Butter Flavor)
1/2 cup sugar
1/2 cup splenda
1/2 cup splenda brown sugar
1/2 cup egg beaters
1 tsp vanilla
2 cups whole wheat flour
2 1/2 cups oatmeal
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
12 oz chocolate chips
1/2 cup pecans

Recipe Directions for Whole Wheat Oat Choco Chip Cookies

  1. Mix together the shortening, sugars, egg beaters and vanilla in one bowl. The more you whip this up the fluffier your cookies will be!

  2. Then mix together all the dry ingredients (omitting chocolate chips and pecans) and pour into the sugar mixture.

  3. Mix all that together really well and then add your chocolate chips (you could also use craisins to make it even healthier) and pecans.

  4. Bake at 375 degrees for 6-8min. This is also a great recipe for high altitude as well!
