Recipe Ingredients for Whole wheat, No Sugar, Yet Very Tasty Blueberry Muffins

1 1/2 cup whole wheat pastry flour
1/2 tsp salt
2 tsp baking powder
1/4 tsp cinnamon
2 eggs
1/4 cup vegetable oil
3/4 cup orange juice
1 cup blueberries
2 tbsp flour

Recipe Directions for Whole wheat, No Sugar, Yet Very Tasty Blueberry Muffins

  1. Heat oven to 400F.

  2. In a large bowl mix together the flour, salt, baking powder and cinnamon.

  3. In a small bowl, beat the eggs then add the oil and orange juice. Add to flour mixture and mix a few turns. Add blueberries and fold in gently.

  4. Fill 12 greased muffin cups with batter. Sprinkle tops with cinnamon sugar if you'd like. Bake 20-25 mins. Cool in pan a few minutes then remove to a rack to finish cooling.
