Recipe Ingredients for Whole Wheat Muffins

1/2 cup melted butter
2 1/2 cups whole wheat flour
1/2 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 large sweet potato
1 egg
1/2 cup milk

Recipe Directions for Whole Wheat Muffins

  1. Preheat oven to 375 degrees and grease 12 muffin tins. In a large bowl, mix together the flour, sugar, baking powder, baking soda and salt. In another bowl, whisk together the melted butter, fruit/vegetable, egg and milk. Fold wet mixture and stir until just combined.

  2. Fill muffin tins and bake about 25 minutes until lightly browned on top.
