These muffins are quick, easy and delicious. The banana is used in place of an egg.

Recipe Ingredients for Whole wheat muffin

1 1/2 cup whole wheat flour
1/2 cup oats
1 tsp cinnamon
1 tsp nutmeg
1/2 cup molasses
1/2 cup olive oil
1 banana
3/4 cup soy milk
3 1/4 tsp baking powder
1/2 tsp salt
1/2 cup grated carrot

Recipe Directions for Whole wheat muffin

  1. Preheat oven to 400 degrees

  2. mix dry ingredients well in medium bowl

  3. add soy milk (or coconut milk), banana, oil and molasses in blender just until smooth

  4. stir into dry ingredients until moist. DO NOT OVERMIX

  5. fold in the carrots and fill 12 muffin cups

  6. bake for 20- 25 minutes. let sit for a minute before removing from muffin tin
