I?m always trying to tweak my lasagna recipe to make it lower in points yet still tasty. I love it with whole wheat lasagna noodles. There is no need to boil them first since they will cook in the oven and will not be overcooked and mushy but retain a nice slightly chewy texture. Makes for a much speedier process too. I used regular cheddar cheese but you could use low-fat if you like it. I also reduced the ground beef down to of a pound. No one will ever miss the extra pound!

Recipe Ingredients for Whole Wheat Lasagna

8 ounces beef, ground 7% fat
1 3/4 cups low-fat cottage cheese
28 ounce Marinara Sauce
6 ounces whole wheat lasagna noodles
1 1/2 cups lowfat mozzarella cheese
1/2 cup cheddar cheese
1/4 cup parmesan cheese
1 egg white

Recipe Directions for Whole Wheat Lasagna

  1. Brown ground beef and garlic in a nonstick cooking pan coated with cooking spray. Add jar of marinara sauce. Put about cup water in jar, put lid back on and shake then add to rest of sauce. Simmer while you are working on the rest of the dish.

  2. In medium mixing bowl, mix beaten egg white, cottage cheese, basil and oregano together until blended. Mix mozzarella and cheddar cheese together in a separate bowl.

  3. Spread enough sauce in bottom of a 13x9x2 inch baking dish to cover thinly.

  4. Layer in the following order : Lay 3 noodles over sauce. Spread 1/3 of cottage cheese mixture over noodles. Spread 1/3 of sauce over cottage cheese mixture. Top with 1/3 of cheese mixture.

  5. Repeat layers 2 more times. Sprinkle parmesan cheese over the top and cover with foil.

  6. Bake at 350 degrees F for 30 minutes. Remove foil and bake for another 15 minutes. Remove from oven and let stand for 5-10 minutes to set. Divide into 10 even servings.
