Low sodium, whole wheat dinner rolls with herbs. This recipe is sort of something makeshifted from a combination of recipes and the fact that I wanted to use whole wheat and no added salt... It's a work in progress ;-)

Recipe Ingredients for Whole Wheat Herb Pull Apart Dinner Rolls

1 1/4 c whole wheat flour
1 cup all purpose flour
2 tbsp all purpose flour
1/2 c 2% milk
6 tbsp water
1/2 large egg
1/4 tsp thyme
1/4 tsp basil
1/4 tsp oregano
2 tbsp honey
8 g Rapid Rise Yeast

Recipe Directions for Whole Wheat Herb Pull Apart Dinner Rolls

  1. Combine 3/4 cup flour, seasonings and undissolved yeast in a large bowl (add 1.5 tsp of salt if desired).

  2. Heat milk, water, honey and butter until very warm (120 to 130F). Combine with the egg and add to flour mixture.

  3. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add 1/4 cup flour; beat 2 minutes at high speed. Stir in enough remaining flour to make soft dough.

  4. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.

  5. Divide dough into 36 equal pieces; shape into balls. Place 3 balls in each pocket of a greased muffin pan. Cover; let rise in warm, draft-free place until doubled in size, about 30 minutes.

  6. Bake at 375F for 20 minutes or until done. Remove from pan; brush with additional melted butter, if desired. Serve warm.

  7. NOTE: I weighed each ball at ~18g each and one came up short at ~15g if you want a size to go from. They don't need to be perfect though, but it makes counting the values easier ;-)
