Spicy and chewy whole wheat ginger snaps

Recipe Ingredients for Whole Wheat Ginger Snaps

1/2 cup unsweetened applesauce
1/2 cup butter
6 tbsp flaxseed meal, ground
12 tbsp water
1 cup molasses
1/4 cup splenda
1/2 cup brown sugar, packed
4 cups whole wheat flour
1 tablespoon baking soda
2 teaspoons baking powder
1 tablespoon ground ginger
1 1/2 teaspoon ground cinnamon
1 1/2 teaspoon ground cloves

Recipe Directions for Whole Wheat Ginger Snaps

  1. Preheat oven to 350 degrees F. Grease cookie sheets.

  2. In small bowl combine flaxseed meal and water, let sit for at least 3 minutes. This replaces eggs in the recipe.

  3. In a large bowl, cream together the softened butter, room temp. applesauce, brown sugar, and splenda. Mix in the flax/water mixture, then the molasses.

  4. In a medium bowl, combine the whole wheat flour, baking soda, baking powder, ginger, cinnamon, and cloves. Stir the dry ingredients into the molasses mixture just until blended. (you may want to refrigerate for 5 to 10 minutes if you want to for into balls and roll in sugar....this will add more calories and sugar, as I did not do this with my cookies).

  5. Spoon cookies onto sheet, about 2 inches apart. Bake for 9 to 10 minutes for soft cookies. 11 to 15 for crispier cookies. Cool on wire racks.
