Recipe Ingredients for Whole wheat Gemelli Pasta with Fresh Vegetables in Hot Pepper Garlic Sauce

2 cup flowerets Broccoli, Flower Clusters
1 med carrot, chopped very small
1/2 medium White Onion
1/2 cup, chopped Squash, Summer, Zucchini, Includes Skin
4 mushrooms, sliced thin
2 cup Twisted Pair (Gemelli) 70% Whole Kamut
0.67 oz Sun Dried Tomatoes
1/2 cup Artichokes
1/2 cup Pasta Sauce

Recipe Directions for Whole wheat Gemelli Pasta with Fresh Vegetables in Hot Pepper Garlic Sauce

  1. Cook pasta in boiling water until aldente about 8-9 min.

  2. While pasta is cooking chop up broccoli and carrot in very small pieces and put in strainer

  3. When pasta is done, pour over broccoli and carrots and let sit.

  4. Use 1 tablespoon of the oil from the pasta sauce to lightly saute chopped onion, zucchini, and mushrooms

  5. Add pasta, broccoli, carrots, slivered tomatoes to saute pan until all veges are just lightly cooked

  6. remove from heat and stir in remainder of sauce

  7. serve warm with green salad
