Recipe Ingredients for Whole Wheat Flax'n Banana Muffins

1/4 cup faxseed
3/4 cup whole wheat flour
3/4 cup all purpose flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 egg, beaten
2 bananas, mashed
3 tbsp vegetable oil
1/2 cup skim milk

Recipe Directions for Whole Wheat Flax'n Banana Muffins

  1. Blend dry ingredients together in a bowl

  2. In a seperate bowl, combine egg, oil, and milk

  3. Add dry ingrediants to wetones and stir until just blended

  4. Fold in bananas (and nuts - optional)Batter will be thick

  5. Fill well-greased muffin cups 2/3 full

  6. Bake at 400 degrees for 18-20 min or until top springs back when touched
