This is what happens when you substitute everything bad for something better. Any pureed fruit can be subbed for oil (i.e. the applesauce), whole wheat, oatmeal and flax versus white flour, The almonds (or walnuts) for added protein and omegas, no cholesterol, and no trans fat.

Recipe Ingredients for Whole Wheat, Flax, Cocoa, Almond... oh my Waffles

1 1/2 cup whole wheat flour
1/2 cup flaxseed
1 cup egg whites
2 cups oatmeal
1 cup almonds
1 tbsp cinnamon
1 tsp vanilla extract
1/2 tbsp nutmeg
1/2 tbsp cloves
2 cups water
1 1/2 cup applesauce
1/2 cup brown sugar
2 tbsp cocoa powder, special dark

I make this weekly so I use a very large Pyrex bowl and just start tossing everything in and stir. Don't fear exploration and switching ingredients. I store the excess in the fridge, if it thickens too much (personally I love it this way) just add a little water.
