A hearty one-dish meal; easy to prepare ahead; serve warm. I use Trader Joe's Lite Shredded 3 Cheese Blend; consisting of Mozzarella, Monterey Jack and Cheddar Cheese. I use 1/3rd cup of each to equal the 1 cup I use in the recipe in order to arrive at a more accurate nutrition analysis. I use Hodgson Mill whole wheat fettuccine from WinCo. Each serving is 350.9 grams (12.38 oz) or apprx. 1 1/2 cups by volume.

Recipe Ingredients for Whole Wheat Fettuccine w/ chicken; white beans; tomatoes and Italian cheeses

12 oz whole wheat fettuccine (the entire box)
12 oz fresh spinach cut into thin strips (or use Baby Spinach)
1/2 lb boneless, skinless chicken breast - poached
1 1/2 cups chopped onion
2 garlic cloves
14 oz can diced tomatoes
3 roma tomatoes - chopped
14 oz white navy beans, drained and rinsed
15 oz reduced fat ricotta cheese
1/3 cup shredded reduced fat Mozzarella cheese
1/3 cup shredded reduced fat Monterey Jack cheese
1/3 cup shredded reduced fat Cheddar cheese
1 teaspoon dried Italian Seasoning (for poaching)
1 tablespoon olive oil

Recipe Directions for Whole Wheat Fettuccine w/ chicken; white beans; tomatoes and Italian cheeses

  1. Poach the chicken breast in Italian herbs and water; when cool, cut into bite-size pieces and set aside

  2. Chop the onion, garlic and tomatoes and set aside

  3. Cut the spinach and set aside

  4. Cook the fettuccine according to directions on package; add cut spinach during last 10 minutes

  5. Drain the cooked fettuccine and spinach

  6. Add olive oil to large pot and saute the garlic, onions and tomatoes; add the cooked fettuccine and spinach

  7. Combine all other ingredients and season to taste with Italian Seasoning, Sea Salt and Fresh Ground Pepper.

  8. Sprinkle the shredded cheese on top before serving.

  9. Serve with tossed green salad
