Recipe Ingredients for Whole Wheat English Muffins

2 cups all-purpose flour
2 cups whole wheat pastry flour
1/2 cup milk, scalded
3 tablespoons butter, room temp
2 1/2 teaspoons yeast
1/2 teaspoon salt
1 teaspoon sugar
1 cup water

Recipe Directions for Whole Wheat English Muffins

Dissolve yeast in 2 T water with sugar, wait til foamy. Mix 2 cup each flour, 1 cup water, milk, and yeast mixture. Let rise ~90 minutes til doubled or collapsed. Add the remaining flour and the butter, mix til combined. Roll out dough to 1/2" and cut out muffins. Place muffins on greasy baking sheet and let rise again, ~45 minutes, til doubled in size. Heat griddle on low, spray with cooking oil or butter and grill muffins on each side a few minutes til lightly browned. You can add semolina flour or cornmeal to the muffins before grilling if preferred.
