These Whole Wheat Date squares make wholesome sumptuous breakfast.

Recipe Ingredients for Whole Wheat Date Squares

1 1/4 cups water
8 oz. chopped dates
1 tsp. lemon juice
1 cup whole wheat flour
1 cup wheat bran
1/4 cup brown sugar
1/2 cup unsweetened applesauce
4 egg whites
1/4 tsp. almond extract

Recipe Directions for Whole Wheat Date Squares

  1. Combine dates, lemon juice and water in saucepan; bring to a boil.

  2. Reduce heat and simmer uncovered 15-20 minutes or until dates are thick and water is absorbed.

  3. Mix well 1 cup whole wheat flour, the wheat bran, 1/4 cup sugar and the applesauce.

  4. Work with hands until mixture resembles coarse crumbs.

  5. Press 2 cups of mixture into 9" square pan, reserve rest for topping.

  6. Bake 10 minutes at 350C.

  7. Meanwhile combine cooled date mixture with rest of ingredients.

  8. Spread evenly over baked crust.

  9. Sprinkle with reserved crumb mixture, pressing in lightly.

  10. Bake in 350C oven for 25-30 minutes or until center is firm.
