Recipe Ingredients for whole wheat couscous salad

3 cups wheat couscous
3 3/4 cups beef broth
1/2 cup red pepper, chopped
1/2 cup seedless cucumber, chopped
1/2 cup dried cranberries
1/2 cup pine nuts, toasted
6 oz roast beef, chopped approx 1/2 cup
80 g lime juice, from 2 limes
10 g lime peel, 2 limes zested
47 g lemon juice, from 1 lemon
10 g lemon peel, 1 lemon zested
1/2 cup extra virgin olive oil
2 tbsp fresh oregano, chopped

Recipe Directions for whole wheat couscous salad

  1. boil beef broth, stir in couscous. Remove from heat and let sit covered for 5 minutes.

  2. stir in chopped veggies, pinenuts, and meat.

  3. mix lemon and lime juice with the zest, oregano and olive oil.

  4. Add salt and pepper to taste
