Recipe Ingredients for Whole Wheat Corn Muffins

132 g. whole wheat flour
120 g. white cornmeal
72 g. sugar
2 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 pinch of freshly grated nutmeg (optional)
224 g. skim milk
14 g. apple cider vinegar
42 g. icbinb
56 g. greek yogurt
123 g. eggbeaters
160 g. corn

Recipe Directions for Whole Wheat Corn Muffins

  1. Preheat oven to 400.

  2. Combine skim milk and vinegar. Set aside.

  3. Combine dry ingredients in a large bowl.

  4. In a separate bowl, mix soured milk mixture, egg, margarine, and yogurt.

  5. Pour wet ingredients into dry ingredients and stir until just moistened. Do not overmix.

  6. Fold in corn kernels.

  7. Spoon into greased muffin tins (or line cups with cupcake liners).

  8. Bake for 15-18 minutes, or until tops are golden and toothpick comes out clean.
