Recipe Ingredients for Whole Wheat Cinnamon Rolls

Dough:
2 1/4 cups all purpose flour
2 1/2 cups whole wheat pastry flour
1/3 cup sugar
1/3 cup margarine
1 cup nonfat milk
1 package dry yeast
1 egg
3 tablespoons water
1 tablespoon ground flaxseed

Filling:
1/2 cup light brown sugar
1/2 cup granulated sugar
3 tablespoons cinnamon, nutmeg, cloves and/or other mixed spices

Recipe Directions for Whole Wheat Cinnamon Rolls

  1. In large mixing bowl, combine 1 cup all purpose flour with 1 cup whole wheat pastry flour. Add 1 package active dry yeast and stir till well mixed. Add 1 tablespoon finely ground flaxseed.

  2. In medium saucepan, combine milk, sugar, margarine, water and 1/4 t. salt. Cook and stir over medium heat till butter almost melts. Add all at once to flour mixture.

  3. Beat with electric mixer on medium speed for 3 1/2 minutes. Using a spoon, stir in as much of remaining flour as you can. Turn onto floured board and knead until dough is smooth and elastic. Cover with towel and let rise in a warm place until double.

  4. Punch dough down and roll into large rectangle. Spray rectangle with nonstick butter flavored cooking spray. Sprinkle sugars and nuts, if desired (1/2 cup pecans will add 23 calories per serving), roll up dough, and cut into 24 slices. Place in large baking pan prepared with nonstick cooking spray. Leave about 1/2 inch space between them. Let rise again until double. Bake in 375 degree oven until golden brown. Remove from oven, cool in pan on wire rack.
